I had my 1st ever sourdough at San Francisco over 14 yrs ago on my 1st ever trip to US when Jared wasbjust 10mth old, it was so sour so so good, to go with clam chowder.
It took sourdough so long to come to Singapore, even then the sourness it's still not as sour like those in SF.
Then came started lab bakery which had really good sourdough sandwhich just it was way too expensive.
I finally took the splurge amd dive down to make my own starters which took abt 7 days.
And finally it took another 1day plus to get this loaf ready

scoring, no blade, just use scissor to cut
1st 25mins, baked at mid of 225 to 250C with WMF pot covered
Last 20mins, pot removed, so surprise even no dutch oven, i could get it so pong. $ saved cos dutch oven easily cost over $300.
Not perfect yet, but its so encouraging for 1st timer
I've since watched so many youtube, and aimed to improve this

Starter lab copycat avocado toast with garlic chilli sauce from macd, too bad no bawang. I had to eat the whole avocado cos it turned bad, kids dont eat these ugly avo.
Day 3 lightly toasted with toaster
Yummiest yummiest. Finished off the whole loaf already
